we’re going to be eating well this week

This is just part of this week’s CSA share, including what appears to be some early early apples!

I’d like to say I’m going to do something creative and special with the blackberries, but they’ll end up going straight from bowl to mouth.

Probably within the next 10 minutes. :-)

Alas, strawberry season is now over. Used the last of them for a killer strawberry shortcake.

I prefer biscuits (in the American sense) as the base of my shortcake. If I’m making my own, I will add the tiniest bit of sugar to the recipe.

washed and sliced the last of the local strawberries from our CSA and tossed with a little sugar, to taste.

Biscuit, sweetened fruit and whipped cream…perfection!

We got our first CSA share this weekend …. it’s early days for the New England growing season, but the first of the strawberries are out!

I decided that these strawberries were destined for a special Sunday morning treat … Swedish pancakes.

My new cooking mantra is KISS … keep it simple, stoopid – a few natural (and where possible, local) ingredients combined to make ambrosia.

This is about as simple as it gets: eggs, milk, flour, sugar, strawberries, cream.

I used this Swedish pancake recipe from allrecipes.com.
I rinsed and sliced my CSA strawberries and tossed with a little sugar (to taste).

I then totally cheated and used whipped cream from a can.

Serve like so, dusted with confectioners’ sugar.

Enjoy!

We love cherries.

We love pie.

So, it goes without saying, we love cherry pie.

I found a great cherry pie recipe God knows WHERE, and copied it into my recipe book, and now I’m going to share it with you.

Because I’m nice like that.

Tart Cherry Pie

2 cans tart cherries in water
1/2 c reserved liquid from cherries.
1 c sugar
3 tbsp quick tapioca
1/4 t salt
1/2 t vanilla extract

Mix together in bowl and let stand for 15 minutes. Pour into pie crust and dot top with butter. Cover with top crust and bake at 425°F for 40-50 minutes.

Yum!

Look how good I’m being!

Trying to eat healthier (than my norm) and lose a few of the holiday pounds in the bargain.

Today’s lunch:

Leftover vegetarian sloppy joes on an Arnold Thin Honey and Wheat bun and a salad (spinach, peas, green beans, black beans & rice, carrots, banana peppers and sunflower seeds.)

No, the pens were not for lunch.

Where are the Ho-Hos, you ask? The cookies? Who am I and what have I done with Kellypuffs?

Well, if I’m very very good, and exercise 3x a week for 12 weeks AND track my nutrition, I’ll get a healthy living rebate from my employer.

They even provide a nifty on-line tool that provides all the metrics you would ever need on your nutritional habits. Besides, having to write down everything you eat forces me to make better choices.

I’ve been tracking for 3 days now … and I’ve already learned that I don’t eat enough protein.

But I’m a big carb fan! :-)

We’re enjoying a little coffee and debating the future of the institution of the Sunday Newspaper.

The Squig is glued to my lap. He was discovered outside this morning, meowing piteously at the back door of the barn. He’s an indoor cat. And there was a frost advisory last night. So he is traumatized… or sated. It’s hard to tell. But I foresee a day much like the Girl’s toddler days. “Carry me. Hold me. Up.”

I need a cat sling in the worst way. If only I had yards of fabrics lying around the house that I could experiment with.

Oh wait. I do.

Anyway, my mind moves to more pressing issues.

“Breakfast?” I ask hopefully.

Himself ponders a moment and then says: “Yeah. What do you want?”

“Pancakes?”

“Yeah.” He nods thoughtfully.

“….with wild blueberries?”

Himself perks right up.

“YEAH! Where do you want me to sit?”

Discovered a nifty, all-natural, low-impact way to eliminate any fruit fly problem you may be experiencing during these lovely late summer days of farm-fresh produce.

Place an open saucer of vinegar, a little sugar and a couple of squirts of dishwashing soap on your counter.

The little angels are attracted to the mixture and trapped by the soap.

It really works!

One of my favorite summer meals – good crusty bread, fresh mozzarella, farm market tomatoes, and home-grown basil.

In this instance, tossed with a little cranberry vinagrette.
