We got our first CSA share this weekend …. it’s early days for the New England growing season, but the first of the strawberries are out!

I decided that these strawberries were destined for a special Sunday morning treat … Swedish pancakes.

My new cooking mantra is KISS … keep it simple, stoopid – a few natural (and where possible, local) ingredients combined to make ambrosia.

This is about as simple as it gets: eggs, milk, flour, sugar, strawberries, cream.

I used this Swedish pancake recipe from allrecipes.com.
I rinsed and sliced my CSA strawberries and tossed with a little sugar (to taste).

I then totally cheated and used whipped cream from a can.

Serve like so, dusted with confectioners’ sugar.

  1. Our first three baskets have been loaded with lettuce. We can only eat so much lettuce! We’ve gotten some asparaugus, radishes, and some other veggies, too. But mainly it’s been lettuce and leafy stuff.
